I am reading your book currently and I am really enjoying it. Can you post a receipe for the Macaroni and Cheese on the cafe menu? Also I was looking for your fav Pappo Pomodoro (spelling) the simple dish you talk about in the book. Graize Mille!
Buona Giornata,
After reading Kitchen Confidential I plan on taking some on some of your earlier works so I may learn more about he industry. I have just graduated SUNY Binghamton in May and am an inspiring restauranteur/chef and have a desire and passion for food. Currently I am employed in the city working for a Pharmaceutical company however I am aggressively looking for a night time job working in a kitchen, anywhere so I can begin my culinary dream. From what I know you are the King of Italian Cuisine in NYC if not the whole US. My background is Dominican, Brazlian and Italian so when I cook at home my various background shines through. My e-mail is Daniel.DePasquale@gmail.com. Like you say on your website, Italian food is simple, that is why it is good. I take the same approach when making my food. It is a way of life for me as well.
Grazie, Daniel
